This was 225 for 10 hours. Wrapped when it was about 175°. Turned up to 250° for another 2 hours til it hit 203/5 internal. Resting in cooler now.
This was a pretty big butt. Use more rub than you think you need.
I like making tacos rather than sandwiches.
Use Motomix or TruFuel. Ethanol free and won't gum up carbs.
Running them at full speed helps a lot. Just before shutting down, full throttle for a few seconds.

It's almost 100% white up here in Montana. No issue finding landscapers, hotel workers, dishwashers or laborers. Everyone works, speaks English and doesn't burn the place down.
