I just use mustard. Not sure how much flavor or difference a light sauce makes on such a large chunk of meat.

This was 225 for 10 hours. Wrapped when it was about 175°. Turned up to 250° for another 2 hours til it hit 203/5 internal. Resting in cooler now. This was a pretty big butt. Use more rub than you think you need. I like making tacos rather than sandwiches.
